Background: I weight 215 and I've been using a Cybex Elliptical in my local gym. This week I've been using level 3 and going for about 35-45 minutes (burning anywhere from 560 - 710 calories.)

You could do something like use level 3 for 60 minutes next time.
then next time use a higher level at 35 minutes. Then each week raise it until you hit 60 minutes again. Then raise it another level.
